  • 4 medium size tomatoes puree
  • 1 big size chopped onion
  • 2-3 Chopped green chilli
  • Lemon juice – 3 tbsp

For Mexican rice

  • 1 big soaked bowl of rice
  • 1-2 tbsp oil
  • 1-2 butter
  • 2 chopped garlic
  • 1 chopped onion
  • 1 medium bowl of corn
  • 1 medium bowl chopped carrot
  • 1 medium bowl chopped capsicum
  • 1 medium bowl of boiled kidney beans
  • 2 -3 green chopped green chilli
  • ½ small bowl of chopped tomato
  • 3 tbsp prepared Mexican masala
  • Small bowl of chopped coriander
  • 1 tbsp oregano
  • 1 tbsp ketchup
  • Salt to taste

  • Place a pan on medium flame, add oil and butter, let the butter melt completely and then increase the flame to high, add some garlic and cook on very high flame for 30 seconds or 1 minute.

  • Also, add tomato puree and pink salt, stir and cook for a minute, reduce the flame and add powdered spices and tomato ketchup, stir and cook on high flame for 3-4 minutes.
